- 100 g Melted butter
- 500 g Carrots
- 2 fruits Orange (juice and zest)
- 1.5 teaspoons Ground cinnamon
- 80 g Sugar
- 150 ml Water
- 1 pinch Salt
- 3 tablespoons Honey
- 30 g Chopped pistachios
Preparazione
- Peel the carrots with a vegetable peeler, then cut them into small, uniform cubes so they cook evenly. Place them in a pot with cold water, freshly squeezed orange juice, and finely grated zest—the cold water helps the carrots cook gently without hardening. When the water comes to a boil, lower the heat and let it simmer patiently. After about twenty minutes, taste a piece: it should yield easily to a fork, tender but not falling apart. Only in the final five minutes, add the sugar and cinnamon: you'll smell the fragrance emerging, a signal that they're mingling beautifully together.
- In a bowl, combine the semolina and melted butter with a generous pinch of salt. Mix with a fork or your fingertips until the mixture becomes crumbly and soft, like sand moistened by sea spray—it should remain loose, not sticky. This is when the toasted semolina's aroma begins to emerge.
- Heat a skillet over medium heat and add the still-warm semolina mixture. Stir constantly with a wooden spoon: you'll see it gradually take on color, from white to pale gold, and the aroma will become rich with a subtle hazelnut note—when you smell this intense, sweet fragrance, it means the semolina has released all its oils and flavor. This takes three or four minutes of steady attention.
- Spoon the warm semolina onto heated individual plates, creating a small nest in the center of each plate with the edges slightly raised in a welcoming gesture. Pour the carrot compote with its orange nectar into the heart of the nest. Drizzle generously with honey as it flows sweetly into the semolina, and scatter fresh chopped pistachios over top: the contrast between the warm semolina, the sweet compote, and the bright, crunchy pistachios makes every spoonful perfect.
