Makroud is the desert's gold pressed into a diamond shape — a Maghrebi soul offered to guests, carried from Kairouan's medinas to Algerian souks like a whispered prayer passed between generations of women's hands.

Ingredienti

  • 300 g Durum wheat semolina
  • 100 g Melted butter
  • 250 g Pitted dates
  • 2 tablespoons Orange blossom water
  • 1 teaspoon Ground cinnamon
  • 3 pieces Cloves
  • 1 pinch Fine salt
  • 400 ml Eucalyptus or acacia honey
  • 500 ml Peanut oil for frying
  • 3 tablespoons Shelled pistachio, finely chopped

Preparazione

  1. Prepare the date paste by finely chopping the pitted dates in a mortar or food processor. Add the ground cloves, cinnamon, and orange blossom water, working it together until the mixture is homogeneous, creamy, and easily moldable like modeling clay. If too dry, add another half tablespoon of orange blossom water. Refrigerate for at least 30 minutes.
  2. Pour the durum wheat semolina and salt into a large bowl. Gradually drizzle in the melted butter while working it through with your fingertips until you achieve a crumbly, sandy texture resembling coarse breadcrumbs. Each grain should be lightly coated with butter. Cover with a damp kitchen towel and let rest for 10 minutes to allow the semolina to hydrate slightly.
  3. On a lightly dampened work surface, press the semolina mixture with your hands into an even layer about 8-10 mm thick, forming a rough rectangle. Using a damp knife, score it into roughly 4x4 cm squares. With a teaspoon, place a small cylinder of date paste in the center of each square, pressing it down gently. Fold the semolina square in half and seal the edges delicately with dampened fingers.
  4. Heat the peanut oil in a deep skillet over medium-high heat until it reaches 170-180°C (use a cooking thermometer: when you dip a wooden spoon in it, tiny bubbles should rise steadily without sputtering). Carefully lower the makroud into the oil, no more than 4-5 pieces at a time to prevent sticking. Fry for 2-3 minutes per side until evenly golden and they naturally float to the surface. Remove with a slotted spoon and drain on paper towels.
  5. Gently warm the honey in a shallow pan over low heat (it should never boil, just reach 50-60°C). While the honey is still warm, dip the fried makroud one at a time, turning gently with two spoons to coat all sides evenly. Remove after 10-15 seconds and transfer to a serving platter, garnishing with chopped pistachios. Let rest at room temperature for 1-2 hours before serving, when the honey will have crystallized slightly on the surface while the interior remains tender.
