  • 4 units Eggs
  • 100 g White cheese (beyaz peynir)
  • 1 unit Spring onion
  • 1 clove Garlic
  • 20 g Butter
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh dill
  • 1/2 teaspoon Dried mint
  • 1/4 teaspoon Red pepper flakes
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 unit Lemon

Preparazione

  1. Grate the zucchini on the large holes of a box grater, just as you would potatoes. Place in a colander, sprinkle with salt and let rest: water will drain out, and that's the moisture that would otherwise flood your dish. After resting, squeeze firmly with your hands, with conviction, until the green pile feels almost dry to the touch.
  2. In a large skillet, warm the olive oil and butter together over medium heat: wait for the butter to foam golden and release a hazelnut aroma—that's your signal it's ready. Add the finely chopped spring onion and crushed garlic, letting them soften for a minute: they should become glossy and fragrant, without browning, or they'll turn bitter.
  3. Pour the well-squeezed zucchini into the skillet and cook over medium-high heat, stirring occasionally: you'll watch the bright green fade, becoming tender and lightly caramelized where it touches the pan—that's where the best flavor concentrates. If it sticks a little, don't worry: just add a splash of water and continue cooking gently.
  4. Lower the heat to low and scatter the white cheese in irregular chunks over the zucchini, then crack the eggs directly into the pan, spacing them well apart. Cover with a lid and let the heat work its magic quietly: the whites should set while the yolks stay glossy and soft, like little suns waiting to be broken.
