  • 300 g Fresh strawberries
  • 2 fruits Yellow peaches
  • 4 fruits Apricots
  • 150 g Blueberries
  • 300 g Cantaloupe melon
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Brown sugar
  • 250 g Mascarpone
  • 100 ml Heavy cream
  • 3 tablespoons White sugar
  • 1 bean Vanilla beans
  • 2 tablespoons Acacia honey
  • 8 leaves Fresh mint leaves

Preparazione

  1. Let's begin with care: rinse the strawberries and blueberries under cold running water, then pat them dry with a clean cloth — excess water will spoil the flavor. For the peaches and apricots, immerse them in hot water for one minute so the skin comes off easily with a gentle knife, then remove the pit by slicing from one side straight through. Now cut all the fruit into small, even cubes, about the size of a walnut — you'll see how they absorb the lemon juice and sugar beautifully.
  2. Pour all the fruit into a large, generous bowl and squeeze the fresh lemon directly over it — you'll smell the aroma rising, that's the right moment. Sprinkle with brown sugar, which has a softer, more enveloping flavor than white sugar. Stir with a wooden spoon, very gently, as if cradling the fruit, so it stays whole and beautiful. The juice that releases must bathe the fruit delicately: let it rest for about five minutes, and you'll see how the fruit has already released a sweet and fragrant sauce.
  3. For the cream, take the vanilla bean and slit it lengthwise with the tip of your knife — inside you'll find those precious little black seeds, scrape them out with your knife and set aside. To the cold mascarpone add the heavy cream, white sugar, and those vanilla seeds that smell like paradise. Now whip it all together with a wooden spoon, it's not tiring: stir gently, round and round, until the cream becomes soft and fluffy like a cloud, smooth and homogeneous. Always taste a spoonful on the tip of your tongue — it should be sweet but not cloying.
  4. Now for the beautiful part: take transparent glasses or dessert plates — so you can see the contrast of colors — and pour the fruit salad with all its sweet juice on the bottom. On top place a generous spoonful of white, velvety cream, letting it fall softly. Finish with a drizzle of golden honey that smells of flowers, and a fresh mint leaf that releases its aroma when you touch it. Serve right away, so everything is cold and fresh as it deserves to be.
