Msemen is the Maghreb written in layers — a bread born in the medinas of Morocco, where the scent of cumin and orange blossom hangs in the air like a half-remembered prayer, where grandmothers' hands have always known the secret language of golden dough folded over centuries of hospitality.

Ingredienti

  • 250 g All-purpose flour
  • 150 ml Warm water
  • 5 g Salt
  • 100 g Melted butter
  • 50 ml Argan oil
  • 50 ml Honey
  • 30 g Sesame seeds

Preparazione

  1. Pour the flour into a bowl and use your fingers to create a small well in the center, like a little house for water. Pour in the warm water and salt, then begin mixing by bringing the flour toward the center, and halfway through the mixing add the melted butter a little at a time. Work with patience until the dough becomes smooth like a baby's skin and elastic, springing back when you pull it gently between two fingers.
  2. Divide the dough into 4 equal balls, weighing them by eye or in your hands—what matters is that they are all the same size so they will cook evenly together. Brush each one with a thin layer of melted butter using your fingers, cover them with a cloth or plastic wrap, and let them rest undisturbed: they will relax and become much easier to stretch out afterward.
  3. Oil the work surface generously with a drizzle of oil and place one ball on it. Using your fingertips rather than a rolling pin, begin gently pulling it from the center outward toward the edges, as if you were caressing a silk tablecloth, until it becomes so thin you can see the grain of the table beneath it. Don't worry if it tears here and there—it's perfectly normal and part of the process: what truly matters is achieving that delicate thinness.
  4. Brush the entire sheet of dough generously with melted butter—don't hold back, this is what gives you that gorgeous crispness. Fold all four sides toward the center to form a square, brushing with butter each time you fold, then fold it over itself one more time until you have a tight rectangle, almost like a small pastry booklet.
  5. Repeat the same stretching and folding process with the other three balls, one at a time, working at your own pace. As you finish each one, place the rectangles on a lightly oiled baking sheet so they don't stick together and stay ready for cooking.
  6. Heat the griddle or pan well over medium heat, not scorching hot, otherwise the msemen will burn on the outside while staying raw inside. Place the rectangle on it and flatten it slightly with your fingers to spread it a bit, cook it 3 to 4 minutes per side until you see the edges turn golden and those beautiful golden bubbles form on the surface—that's your signal it's ready. Flip it gently with the help of a wide spatula.
  7. Transfer the msemen while still hot onto a plate and immediately sprinkle it with sesame seeds, which will stick much better thanks to the warmth and the butter. Bring it to the table right away without waiting, because the secret is eating it hot, with argan oil and honey on the side so everyone can dress it however they prefer.
