  • 320 g Ripe bananas (not too yellow)
  • 3 pieces Whole eggs
  • 2 pieces Egg yolks
  • 40 g All-purpose flour
  • 60 g Sugar
  • 30 g Butter
  • 150 ml Whole milk
  • 15 ml Fresh lemon juice
  • 1 pinch Salt
  • 0.5 g Vanilla powder (optional)

Preparazione

  1. Peel the bananas and slice them thinly into rounds. Place half the pulp in a blender with one egg yolk and puree for about a minute until you have a smooth, uniform cream — this is the secret to keeping the fresh banana flavor intact, without cooking and hardening it.
  2. In a saucepan over medium-low heat, melt the butter with a gentle simmer — it should not brown, only melt. Immediately add the flour and stir constantly for one minute until it smells like toasted hazelnut and the mixture becomes smooth and sandy: this well-amalgamated roux in the fat will allow you to bind the milk without lumps.
  3. Pour the milk very slowly while whisking constantly, keeping the heat at medium-low — the pan should be warm to the touch but not smoking. Stir for 4-5 minutes until the sauce coats the back of a spoon: run your finger across it and the trail should not immediately disappear. Add a pinch of salt and remove from heat.
  4. Add the blended banana cream to the béchamel while still warm and stir until completely incorporated — the residual heat will gently cook the yolks you'll add next, without scrambling them. In a bowl, whisk together the 3 whole eggs and 2 remaining yolks with the sugar for about 2 minutes until the mousse becomes pale and foamy.
  5. Tempering the yolks protects them from thermal shock: pour one tablespoon of banana-béchamel sauce into the whisked yolks and stir constantly, repeat with 2-3 more tablespoons, always stirring. Then pour the entire tempered mixture back into the saucepan and stir vigorously for 2-3 minutes with the heat off — the residual warmth will gently cook the eggs, transforming them into a silky cream, not a scramble.
  6. Thinly slice the remaining banana half and arrange in a serving bowl or individual cups. Pour the warm cream over the top, season with another pinch of salt, and finish with a drizzle of fresh lemon juice — this bright acidity illuminates the banana's sweetness and closes the palate. If you love vanilla, add just a hint now.
  7. Refrigerate for at least one hour before serving: the cream will set, the banana slices will absorb the liquid, and the dessert will become creamy, fresh, and perfectly balanced. Taste before serving and adjust the salt and lemon if it needs that final touch of brightness.
