Ingredienti

  • 1 thick slice (2 cm) Toasted bread or Catalan bread
  • 1/2 piece Ripe tomato
  • 1/2 clove Fresh garlic
  • 1 tablespoon Extra virgin olive oil
  • 1 pinch Sea salt
  • 1 pinch Black pepper

Preparazione

  1. Place the bread on a nice hot grill, or in a pan without oil, and let it sit there until the edges turn golden and a bit charred while the heart stays soft. It should smell toasty, not burnt: if you see smoke, it's already too late. Flip the bread halfway through cooking so it dries out nicely on both sides.
  2. Take the garlic clove cut in half and rub it across the bread while it's still hot, because the heat helps open up its aroma without making it heavy or overwhelming. Just one light pass is enough, there's no need to overdo it: the garlic should caress the bread, not smother it.
  3. Now take the tomato cut in half and rub it with your hand across the bread, moving in circles so the flesh breaks down nicely and the bread soaks up all that sweet juice. Press a little harder toward the end, when only the skin is left, so you don't waste even a single drop of that flavor.
  4. Finish with a generous pour of good quality oil, a pinch of sea salt and a grind of black pepper, and bring it straight to the table. The real secret is speed: hot, crispy bread won't wait around, it must be eaten the moment it's dressed so it keeps all of its wonderful fragrance.
