Ingredienti

  • 4 slices Rustic-style bread
  • 150 g Buffalo mozzarella
  • 8 fillets Salt-cured anchovies
  • 2 medium Eggs
  • 100 ml Whole milk
  • 30 g Type 00 flour
  • 1 pinch Fine sea salt
  • 1 pinch Freshly ground black pepper
  • 500 ml Peanut oil for frying

Preparazione

  1. Start with the heart of the sandwich: slice the mozzarella into thin strips, not too thick, so it will melt evenly without leaking out during frying. On one slice of bread, lay down 2 anchovy fillets and a few strips of mozzarella, then cover with the other slice and press the edges firmly with the palm of your hand, as if you're giving it a gentle embrace.
  2. Now seal the edges really well, pressing with your fingers or running the tines of a fork all around the perimeter, almost as if you're stitching a delicate pattern. This step is your true insurance policy: if the edges aren't properly sealed, the mozzarella will escape into the hot oil and you'll end up with an empty sandwich and oil you'll have to throw away.
  3. In a bowl, beat the eggs with the milk, a pinch of salt, and a grind of pepper until you have a smooth and uniform mixture. Coat the sandwich first in the flour, shaking off any excess from both sides, then dip it quickly into the egg batter: it should be well dressed but not left soaking, otherwise the crust won't turn out crispy.
  4. Heat the oil in a high-sided pan until it's very hot, but don't let it smoke—if you have a thermometer, aim for 170°C, otherwise drop a breadcrumb in: if it sizzles immediately and pops right to the surface, you're ready. Fry the breaded sandwich for 2-3 minutes on each side, turning it gently, until it becomes a beautiful uniform golden color and feels crispy to the touch, then set it on paper towels so it can shed the excess oil.
