Nata tra le nebbie dolci del Piemonte, la Panna Cotta del Primo Sussurro porta nel suo candore il silenzio dei pascoli alpini all'alba, dove il latte sa ancora di erba bagnata e di tempo lento. È il gesto antico delle mani contadine trasformato in grazia — un piatto che non urla, ma bisbiglia.

Ingredienti

  • 400 ml Heavy cream
  • 150 ml Whole milk
  • 60 g Orange blossom honey
  • 4 g Gelatin sheets (or agar-agar for vegans)
  • 30 ml Cold water
  • 250 g Fresh strawberries
  • 150 g Fresh raspberries
  • 100 g Fresh red currants
  • 120 ml Dry red wine (Nebbiolo or Barolo)
  • 40 g Brown sugar
  • 0,5 piece Vanilla pods (half pod)
  • 1 pinch Ground pink peppercorns
  • 10 ml Extra virgin olive oil (for finishing)

Preparazione

  1. Prepare the gelatin: pour cold water into a small bowl and sprinkle the gelatin sheets over it, letting it rest for 5 minutes to hydrate completely — you'll see it take on a spongy consistency. If using agar-agar, dissolve it in 50 ml of cold water and bring to a brief boil to activate it.
  2. Heat the cream and milk together in a saucepan over medium-low heat until you see the first wisps of steam rising (it must not boil, or the cream will break). When the mixture reaches about 65°C, add the orange blossom honey and stir gently until completely dissolved — the aroma should perfume your nose with orange blossom flowers.
  3. Remove from heat and pour the hydrated gelatin into the warm cream, stirring with a wooden spoon for 1-2 minutes until completely dissolved and the mixture is homogeneous. Now add the pink peppercorns — just a single pinch, because the idea is to whisper sensuality, not to shout.
  4. Divide the mixture among 6 dessert glasses or cups (glass ones, if you have them — you'll see the layers better). Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight: the panna cotta should be silky, slightly trembling on the spoon.
  5. Meanwhile, prepare the red berries: slice the strawberries into wedges, leave raspberries and currants whole. In a saucepan, pour the red wine and brown sugar, add the half vanilla pod split in half (so it releases the seeds). Bring to a boil over medium-high heat, then immediately lower to low heat and let simmer for 5 minutes — the wine should reduce slightly and darken.
  6. Pour the reduced wine into a bowl and add the sliced red berries, stirring gently so as not to break them. Let cool completely, then place this compote in the refrigerator for at least 2 hours: the berries will absorb the wine and become glossy, almost burgundy.
  7. When serving, remove the panna cotta from the fridge 5 minutes before — this will make it feel creamier on the palate. Pour the red berry compote over each glass, letting the wine flow down the sides of the panna cotta creating a fascinating ombré effect. Finish with a thin thread of extra virgin olive oil that shines on the surface — it's the final touch that ties together Mediterranean tradition.
