Rfissa is a Maghrebi embrace woven from centuries of Berber hospitality, born in the threshold between celebration and nourishment — traditionally offered to women after childbirth, a dish that carries the weight of community and the tenderness of survival itself.

Ingredienti

  • 1 kg Whole chicken
  • 4 pieces Msemen (Moroccan phyllo pastry)
  • 250 g Dried lentils
  • 2 teaspoons Fenugreek seeds
  • 2 medium Onion
  • 4 cloves Garlic
  • 1 teaspoon Saffron
  • 1 tablespoon Fresh grated ginger
  • 1 stick Cinnamon stick
  • 1 liter Chicken stock
  • 100 ml Olive oil
  • q.b. Salt and pepper
  • 1 bunch Fresh parsley
  • 1 bunch Fresh cilantro

Preparazione

  1. Clean the chicken thoroughly, cut it into 8 pieces, and place it in a pan with oil that is smoking hot: let it brown without stirring too much, allowing that beautiful golden crust to form that seals all the juices inside. When all the pieces are nicely colored, add the minced onion, garlic, and ginger and let them wilt together with the chicken, stirring from time to time: you'll smell the aroma rising from the pan and becoming sweet and spiced, a sign that everything is ready for the next step.
  2. Pour the hot broth over the chicken — hot, not cold, otherwise the meat will seize up and toughen — then season everything with saffron, cinnamon, salt, and pepper. Bring it to a boil, lower the heat, cover with a lid, and let it simmer gently: the chicken is ready when a fork slides into the meat without any resistance.
  3. While the chicken simmers slowly, put the lentils in salted water and cook them until they are tender but still whole and intact, not mushy — taste one to be sure. In a dry pan, without any oil, toast the fenugreek seeds for a couple of minutes until they release a toasty and slightly bitter aroma: as soon as you catch that scent, remove from the heat, chop them roughly, and mix them with the drained lentils.
  4. Put the msemen in a very hot oven until they become crispy and golden at the edges — you'll almost hear them sing when you touch them. The moment they come out, while they're still warm, pull them apart with your hands into thin, delicate shreds: this is a gesture that demands patience but transforms the presentation of the dish. Spread this soft, wispy layer on the bottom of your serving platter, creating a gentle cushion that will cradle everything that comes after.
  5. Pour the lentils fragrant with fenugreek over the bed of shredded msemen, distributing them gently until they cover the base completely. Arrange the pieces of chicken, still piping hot, on top, then pass the cooking broth through a fine strainer and pour it slowly over everything: it should moisten each layer without drowning it, so that every spoonful will carry with it a little bit of every flavor.
  6. Before bringing it to the table, sprinkle with a handful of fresh parsley and cilantro chopped just moments before: the bright green against the golden colors of the dish is already an invitation to eat. Serve right away, while everything is still hot and fragrant, and let each person stir the layers together in their own bowl, so that every spoonful becomes a different surprise.
