Born from the misty meadows of northern Italy, where wild asparagus pushes through cold earth each April like a green promise, this risotto carries centuries of peasant wisdom and Po Valley soul — a dish that belongs to the land the way morning fog belongs to the river.

Ingredienti

  • 320 g Carnaroli rice
  • 400 g Fresh wild asparagus
  • 1 liter Vegetable broth
  • 1 medium White onion
  • 150 ml Dry white wine
  • 80 g Butter
  • 100 g Grated Parmigiano Reggiano
  • 3 tablespoons Extra virgin olive oil
  • q.b. Salt and pepper

Preparazione

  1. Take the wild asparagus and bend each stalk with your fingers: it will snap on its own at exactly the right point, leaving behind the tough, fibrous part. Rinse them thoroughly and cut them into pieces about 3 cm long, then toss them in a pan with a drizzle of oil over high heat for 2-3 minutes: they should stay vibrant in color and release that green, slightly bitter aroma that is their signature. Remove them from the heat and set them aside—you'll need them later.
  2. Heat the vegetable broth in a small pot and keep it on low heat, barely simmering: rice wants hot broth, not cold, otherwise it gets a fright and the cooking stretches out forever. Meanwhile, in a wide pot, melt butter and oil together and let the finely minced onion soften over gentle heat for 3-4 minutes, stirring occasionally, until it becomes transparent and smells sweetly fragrant, never allowing it to color.
  3. Pour the rice into the pot and stir it for a couple of minutes until every single grain becomes glossy and feels hot to the touch of your spoon: this step seals the rice and gives it character. Pour in the white wine and stir until you no longer smell the alcohol, then begin adding the hot broth one ladle at a time, stirring frequently and waiting for the liquid to be absorbed before adding more: this will take about 16-17 minutes of patience and attention, so don't stray far from the stove.
  4. Taste a grain of rice: it should be creamy on the outside but still have a firm, slightly resistant heart inside. At this point, add the toasted asparagus you set aside earlier, stir gently, then turn off the heat immediately. Add the cold butter in small pieces and the Parmesan, stirring with energy and broad, sweeping movements: this is the gesture that creates the signature flowing, creamy, glossy risotto that we love. Taste it and adjust for salt and pepper only at the very end, never before.
  5. Bring the risotto to the table right away, in heated plates because it doesn't like to wait and will become tired and limp if you let it sit. Garnish with a few raw asparagus stalks sliced paper-thin, a cloud of freshly grated Parmesan, and a drizzle of extra virgin olive oil poured raw over the top: this final flourish perfumes everything and signals that it's ready to eat, not to admire.
