  • 4 tablespoons Colatura di alici di Cetara
  • 2 cloves Fresh garlic
  • 1 piece Red chili pepper

  • 1 small bunch Fresh parsley
  • 1 piece Organic lemon

Preparazione

  1. Place a large pot of abundant water on the heat, salt it once it boils, and add the spaghetti, cooking it until it reaches that perfect al dente texture—slightly resistant when you bite into it—following the time indicated on the package as your baseline guide. Before you drain it, don't forget to set aside a full cup of that cooking water: it's precious, carrying with it the starch that you'll need later to bind and emulsify the sauce together.
  2. Take a large bowl, one that will have enough room to eventually hold all the pasta, and pour in the extra virgin olive oil. Add the garlic sliced into thin sheets and the red chili pepper broken apart by hand, then let everything rest peacefully at room temperature: this way the aromas wake up slowly, without rushing, and the oil gets to absorb the character of the garlic and the heat gently.
  3. Now pour in the anchovy essence a thin stream at a time, stirring with a spoon after each addition before adding more: this is an ingredient as potent as the voice of the sea itself, and it must be introduced gently and cautiously. Stop when you can feel that the aroma is present but balanced, it should never overpower the other flavors.
  4. Pour the still-steaming spaghetti directly into the bowl of sauce and toss with light hands, almost as if you're caressing the pasta. Add a ladle of the reserved cooking water and keep turning it over: you'll watch as the oil and water come together into a soft, creamy emulsion that coats every strand of pasta, glossy and never breaking apart or separating.
  5. Finish with a handful of parsley chopped fresh at the moment and a few drops of lemon juice, which awakens everything with brightness and freshness. Always taste it before serving: the anchovy essence should brush across your palate like a savory caress, and if you find it taking over, back it off gently with a bit more of the reserved cooking water.
