Ingredienti

  • 8 pieces Medium courgettes
  • 200 g Long-grain rice
  • 1 medium White onion
  • 30 g Fresh mint
  • 20 g Fresh dill
  • 20 g Fresh parsley
  • 120 ml Extra virgin olive oil
  • 500 ml Water
  • 400 ml Warm vegetable stock
  • q.b. to taste Salt and black pepper
  • 300 g Thick Greek yogurt
  • 1 piece Lemon

Preparazione

  1. Rinse the courgettes thoroughly under cold water and pat dry. Trim the ends, then using a narrow sharp knife or a melon baller, carefully scoop out the centre of each courgette: you must hollow them without piercing the skin, leaving a layer of flesh about half a centimetre thick to keep them sturdy. Reserve all the scooped flesh—you'll need it for the filling.
  2. Finely chop the onion and the courgette flesh you've scooped out, keeping the pieces small and uniform. Heat the oil in a wide pan over medium heat, add the onion and courgette flesh: stir frequently until they become soft and lightly golden at the edges, about 3-4 minutes. The secret is patience—gently caramelised onion brings sweetness. Season with salt and pepper as you cook.
  3. Pour the rice into the soffritto and stir well for 2 minutes: you'll see the grains become glossy and translucent at their edges, and smell a nutty aroma rising from the pan—that's the sign the rice is toasting properly. Then add the hot stock (preferably already warm, so the rice doesn't cool down), cover with a lid and reduce heat to medium. Leave to cook for about 15 minutes: the rice must absorb the liquid and remain light and al dente, not mushy.
  4. Remove from heat and add the finely chopped aromatic herbs: mint, dill and parsley bring the freshness that is the soul of this dish. Mix well, then taste the mixture—this is important, always taste—and adjust the seasoning with salt and pepper to your liking. Let it rest for 5 minutes until it cools slightly: this makes it easier to handle when filling the courgettes.
  5. Using a teaspoon, gently fill the centre of each courgette with the rice mixture: work carefully, without pressing hard, so the courgette stays intact. Arrange the stuffed courgettes upright in a wide pan (or a shallow baking dish if you prefer), pour the remaining oil around them and add the water. The liquid should not cover the courgettes, just moisten them lightly from the bottom.
  6. Cover the pan with a lid or foil and turn the heat to medium-low. Cook for 20-25 minutes: the courgettes should become tender when pierced with a fork, and the liquid at the bottom should reduce almost completely. You'll hear a gentle sizzle towards the end: that's the signal that the liquid is finishing and the courgettes are caramelising slightly.
  7. Serve the courgettes warm, not piping hot: this way the flavours express themselves better. Accompany each serving with a generous spoonful of Greek yogurt dressed with a pinch of salt, pepper and a few drops of fresh lemon juice. Finally, place a small sprig of fresh mint on top: it's the finishing signature, that touch that transforms the dish into something special.
