- 320 g Pearl barley
- 2 medium Eggplants
- 2 medium Zucchini
- 2 whole Red bell peppers
- 250 g Greek feta
- 150 g Kalamata olives
- 100 ml Extra virgin olive oil
- 2 whole Fresh lemon
- 3 cloves Garlic
- 2 teaspoons Dried oregano
- q.b. Salt and black pepper
- 2 handful Fresh parsley
Preparazione
- Fill a large pot with water and add a generous pinch of salt—the water should taste like broth so the barley absorbs flavor as it cooks. Bring to a rolling boil, then pour in the barley and lower the heat to a gentle simmer. Taste after 20 minutes: it's ready when the grain still has a slight bite but the kernel has become soft and translucent. Drain well through a colander, then pour it into a large bowl while still warm—this way it will better absorb the dressing that comes next.
- While the barley cooks, prepare the vegetables with care. Slice the eggplants and zucchini lengthwise so they stay intact on the grill: slices about half a centimeter thick, no thinner or they'll fall apart. Halve the peppers and carefully remove the seeds. Now brush each slice generously on both sides with good oil, and sprinkle with salt and pepper—vegetables will burn on the grill if not well oiled.
- Heat the grill or griddle until the metal is almost white with heat—hold your hand a few centimeters above and you'll feel the warmth immediately. Lay down the vegetables and don't touch them for the first 3-4 minutes: listen to the decisive sizzle, watch as the edges turn golden and char marks appear. Flip gently just once, another 3-4 minutes on the other side. The vegetables should be tender inside but still with a little resistance, not mushy. Transfer to a cutting board and while still warm, cut them into irregular pieces—more natural looking, more beautiful.
- In a nice bowl, pour in the extra virgin oil—don't be stingy, it's the heart of this dish—and squeeze in the juice of two fresh lemons. Add the garlic minced very fine (half a clove is enough), a tablespoon of dried oregano that you rub between your fingers to release the aroma, and salt and pepper to taste. Mix well until the oil and lemon come together in a lovely creamy emulsion. Taste: it should taste good just as it is, because this will be the dressing for the salad. Pour this dressing over the barley while still warm so it absorbs everything.
- Add the grilled vegetables to the barley with its dressing, the Kalamata olives (pitted so there are no surprises when eating), and the fresh parsley minced just before serving. Toss gently with your hands or two wooden spoons, without crushing anything—each ingredient should remain distinct, not a mush. Taste a spoonful while it's warm: this is the right moment to adjust the salt or lemon if needed.
- Transfer the salad to a nice serving bowl and crumble the feta over it with your fingers in generous, irregular fragments—don't pulverize it, it should remain prominent. Now the most important step: refrigerate it for at least 30 minutes. It's not laziness, it's magic: the flavors weave together, the barley continues to absorb, the feta softens, and everything becomes one. When you serve it, the first bite will be infinitely better than it was before.
