Kunefe carries the amber light of Hatay and Antep within its threads, a dessert born where Ottoman kitchens met the warmth of Mediterranean shores. It is a dish of celebration and reunion, served where families gather beneath vines and old stone, its golden crown a signature of hospitality passed through generations.
Ingredienti
- 300 g Kadayif (shredded phyllo dough strands)
- 150 g Clarified butter
- 250 g Künefe cheese or fresh unsalted mozzarella
- 300 g Sugar
- 300 ml Water
- 1 tablespoon Lemon juice
- 3 tablespoons Chopped pistachios
Preparazione
- Start with the syrup, which must arrive cold when the künefe comes hot from the heat: this contrast is the true secret of the dessert. Put water and sugar in a small saucepan over medium heat, stir until the sugar dissolves completely, add the lemon juice and let it simmer gently without stirring for 10 minutes, until you notice the immersed spoon is coated with syrup. Turn off the heat and let it cool completely at room temperature without rushing: if you pour hot syrup over a hot dessert you'll soak it and make it mushy instead of glossy.
- Now take the kadayif and separate it well with your hands in a wide bowl, as if you were combing strands of golden hair, pulling apart each thread without crushing it: it must remain light and airy. Melt the clarified butter over low heat until it becomes liquid and begins to smell of hazelnuts, then pour it still hot over the kadayif and work it with your hands until every strand is glossy and well coated. It's this step, not oil and not haste, that gives you the crispy golden crust you're looking for.
- Take a 24 cm round non-stick baking pan, butter it lightly and spread half the kadayif pressing firmly on the bottom with the back of a spoon, as if you were forming a small shell. Over this distribute the cheese, in slices or crumbled, to cover all the bottom with a generous layer but not a mound: it will melt and spread on its own during cooking. Cover with the remaining kadayif and press the edges well toward the center, so the cheese won't escape while it cooks.
- If cooking on the stovetop, keep the flame at medium-low, cover the pan with a lid or aluminum foil and turn it occasionally: in about 15 minutes the bottom will become dark golden and crispy, which you can check by lifting an edge with a spatula to see the amber color. If you prefer the oven, bake at 200°C for 20-25 minutes until the surface is golden like fresh-baked bread, and listen carefully: a slight crackling sound tells you the butter is caramelizing the strands nicely.
- As soon as it comes out, flip the künefe onto a serving plate with a decisive gesture, so the most golden side stays on top and makes a beautiful presentation. Immediately, while it's still piping hot, pour the cold syrup slowly all over the surface: you'll hear a small sizzle, and that's exactly the right sound, a sign that the dessert is drinking the syrup without becoming soggy.
- Let the künefe rest for 5 minutes before cutting it: that's the time needed for the cheese inside to settle into a melting but not liquid consistency, and for the syrup to distribute evenly through every layer. Sprinkle with the chopped pistachios to add crunch and color, then serve hot in wedges. Taste a small piece yourself first, adjust with a drizzle of syrup if needed, and bring to the table with pride.
