Born from the sun-bleached stones of Greek agoras and the murmur of ancient marketplaces, this pita carries within its golden crust centuries of communal hunger and shared warmth — it is not merely bread, it is the edible memory of a civilization that learned to transform wheat and fire into belonging.

Ingredienti

  • 500 g All-purpose flour
  • 300 ml Warm water
  • 7 g Fresh baker's yeast
  • 10 g Fine sea salt
  • 30 ml Extra virgin olive oil
  • 40 g Sesame seeds
  • 100 ml Water for brushing

Preparazione

  1. Dissolve the yeast in lukewarm water—not hot, or you'll kill it—and let it rest undisturbed: you'll watch as a delicate foam forms on the surface, the telltale sign that it's alive and ready to work. Then pour everything into the flour with the salt and start mixing with your hands until the mixture becomes uniform and soft to the touch.
  2. Now add the oil and work the dough with vigor, pushing forward with the heel of your palm and folding it back over itself, for about ten minutes: your hands will tell you when it's ready, because it will no longer stick to your fingers and will become smooth as a baby's skin. Shape it into a nice round ball and place it in a bowl that you've coated with oil, turning it once so it gets dressed all over.
  3. Cover it with a damp cloth that must not be allowed to dry out, and set the bowl in a warm corner of your kitchen, away from any drafts. Let time do its work: you'll know it's ready when the dough has doubled in volume, puffy and soft like a cloud.
  4. With floured hands, divide the dough into eight equal pieces, weighing them by eye if you want them all the same size, and shape them into smooth balls by rolling them under the palm of your hand. Roll out each ball with a rolling pin into a thin disk, three or four millimeters thick, without pressing too hard or the air won't be able to puff them up properly in the oven.
  5. Brush a light veil of water over each disk using your wet fingers or a pastry brush, then scatter sesame seeds generously over the top, pressing gently so they stick well and won't fall off during baking. Lay the disks on a baking sheet lined with parchment paper, spacing them apart so they can puff up freely.
  6. Heat your oven nice and hot to 230°C, and wait for it to truly reach temperature before putting the pitas in, otherwise they won't puff up the way they should. Bake for 12 to 15 minutes and watch the magic unfold: they'll balloon up like little balloons and the crust will take on a beautiful golden color with crispy seeds across the surface.
  7. The moment they come out of the oven, immediately wrap the hot pitas in a clean kitchen towel: this is the secret to keeping them soft, because the steam trapped inside will soften the crust instead of letting it harden. Bring them to the table while still warm, perhaps meant to be torn apart with your hands: you'll breathe in the aroma of toasted sesame, which is simply wonderful.
