This cake is born where the Aegean light touches the first hours of morning — a Greek act of faith, ancient as the olive groves of Attica, where honey has always been the language the gods used to speak to mortals and yogurt carries the cool memory of limestone hills and grazing flocks.

Ingredienti

  • 250 g Greek yogurt
  • 150 g honey
  • 3 pieces eggs
  • 200 g all-purpose flour
  • 50 g sugar
  • 80 ml olive oil

Preparazione

  1. Preheat the oven to 175°C and prepare a 20x20 cm square baking pan: lightly oil it with a little olive oil and line the bottom with parchment paper. This protects the cake and lets it slide out perfectly after baking. Don't skip this step — it's the difference between a cake that comes out whole and one that crumbles.
  2. In a large bowl, whisk the 3 whole eggs with the sugar using a manual whisk for at least 2-3 minutes: you want the mixture to become foamy and pale, almost cream-colored. This incorporates air that will make the cake rise in the oven. Then add the Greek yogurt and honey, stirring decisively but without deflating everything — just 20-30 seconds of circular whisking will do.
  3. Pour the olive oil over the mixture and fold well with a rubber spatula, using strokes from bottom to top for 20-30 seconds. The oil should integrate completely — the mixture should look glossy and homogeneous, like a light mousse. Now sift the flour directly over it, half a cup at a time, and gently fold the batter onto itself with the spatula: don't stir in circles, but rather lift from the bottom, fold over the flour, and repeat.
  4. Pour the batter into the prepared pan and level the surface with a damp spatula. Bake at 175°C for 30-35 minutes: the cake is done when the edges start to pull away from the pan and a toothpick inserted in the center comes out clean or with just a few moist crumbs (not wet). The surface should be golden, almost caramelized at the edges, and when you take it from the oven it should smell of caramelized honey.
  5. Let the cake rest in the pan for at least 10 minutes before turning it out — residual heat finishes the inside cooking. Then invert onto a plate and carefully peel off the parchment paper. Serve warm or at room temperature, nothing more.
